 .WHAT I’M BAKING. 

Chickpea Cookie Dough 🍪 I'm obsessed with this vegan cookie dough recipe. It’s full of simple, powerful ingredients like chickpeas and nut butter. It's perfect for a quick bite between workouts or a sweet treat to share with your fam. Let me know if you like it! ⬇️ 

Ingredients:

  • 1 (15-ounce) can reduced sodium chickpeas, rinsed and drained

  • 1/4 cup creamy peanut butter or your favorite nut butter

  • 1/4 cup rolled oats or quick cooking oats

  • 1/4 teaspoon ground cinnamon

  • 1/4 teaspoon baking powder (only if you're baking the dough)

  • 1/4 teaspoon sea salt

  • 1/4 cup pure maple syrup (I use RX maple to reduce sugar)

  • 1 tablespoon vanilla extract

  • 1/3 cup chocolate chips (I like Hu Kitchen or Lily's)

For No-Bake Dough:

  1. Load up your food processor with all the ingredients—chickpeas, nut butter, oats, cinnamon, salt, maple syrup, and vanilla. Blitz until you’ve got a smooth, creamy mix.

  2. Transfer the dough to a mixing bowl. Fold in the chocolate chips. (You can try to mix them directly in the food processor bowl, but I find using a separate bowl is easier and more effective in the end).

  3. Scoop your dough into an airtight container and freeze for 60-90 minutes. This is where patience pays off—wait for it to set to get the best texture.

To Bake into Cookies:

  1. Preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper or a silicone baking mat.

  2. Scoop the dough. Small cookies work best. I used a small cookie scoop to make cookies that were each about 2 tablespoons of dough and 1 1/2 inches apart.

  3. Bake for 10 minutes. Then, let the cookies rest on the sheet for 5 minutes, before transferring them to a wire rack to cool completely.

Timeless Running Tips 🏃‍♀️ I recently spoke with SHAPE about my upcoming re-release of “Shut Up and Run”. It’s been nearly a decade since its first edition, and it's fair to say a lot has changed since then! The new paperback includes a fresh cover, new photos, my go-to playlists, and updated content, while still retaining all the essential running tips. Here's a peek at a few timeless tips for runners looking to up their game ⬇️

  • Focus on minutes, not miles. Release yourself from paces and distances — just go out in minutes. Maybe play a podcast or a favorite album. It could start with a 15 minute-walk.

  • Use the buddy system. Going out with friends is amazing. Find a running group. Or, with Peloton, you have friends at your fingertips.

  • Use the talk test. Put on ‘Texas Hold ‘Em’, honey, and sing along! Initially, you have to be able to sing along to your favorite song, which means running much slower than you think. The fastest runners in the world go slow to go fast.

  • Don’t underestimate the power of good shoes. If you think that you're going to really participate in running, it's important to get fitted for running shoes and buy proper ones for your feet and your gait.
